Meat from Germany

Nordhessische Ahle Wurscht g.g.A.Ahle Wurscht

Pork from older, heavier pigs is processed while still warm from slaughter, seasoned with salt, saltpetre, pepper and nutmeg, and stuffed into casing. It ripens for at least four weeks in clay-walled rooms or climate chambers, losing at least 30 % of its weight, and may be lightly cold-smoked over beech. Made in 6 steps over 29 days. The longest step, ripen in a sausage room, takes at least 28 days (Regierungspräsidium Gießen 2023). Spontaneous ripening flora that lowers the pH does most of the fermenting.

What makes this one different

Ahle Wurscht is made from pork that is still warm from slaughter and must be filled within 12 hours. It uses older, heavier pigs and saltpetre instead of nitrite curing salt, and ripens slowly to at least 30 % weight loss.

  • Feldkieker800–3000 g when freshly filled; needs at least 12.5 % connective-tissue-free meat protein instead of 12 %.

Safety

Keeping quality comes from acidification, drying and added salts. The German food code classes such raw sausages as storable unrefrigerated (above +10 °C) while uncut; the trade association advises keeping cut sausage at +7 °C for no more than 7 days.

History and sources

Every number is labelled with how it is known. How this atlas is made

Home slaughter without refrigeration meant meat had to be processed at once, which gave the sausage its texture. Slow Food Germany added it to its Ark of Taste in 2004, and the first Ahle Wurscht championship of butchers' guilds was held in 2011. The EU registered the PGI in 2023.
