Side-by-side or overlay PDF diff driven by one engine that reads each file into a structured model — text, vector geometry, images, form fields, annotations — and compares the models. Moves show as moves, edits show only where they happened, and any PDF type works without picking a mode.

Pork from heavy pigs or Cinta Senese pigs is minced with salt, pepper, garlic and fennel seeds or flowers, often with a little wine, and stuffed into casing. It dries at 12–25 °C and matures at 11–18 °C for 15 to 45 days or more by size, under a feathery mould. Made in 5 steps over 15 days. The longest step, mature, takes at least 15 days (Disciplinare di produzione della IGP Finocchi…) and runs at 11–18 °C (Disciplinare di produzione della IGP Finocchi…). Salt is 2.5–3.5 % (Disciplinare di produzione della IGP Finocchi…). Microbial starter cultures does most of the fermenting.

What makes this one different
Finocchiona is seasoned with fennel seeds or flowers and kept soft on purpose. In 2017 its maximum water activity was raised from 0.92 to 0.945 to keep the slice moist, and the specification calls its taste never acidic.
Small formats (0.5–1 kg)At least 15 days of drying and maturing.
Large formats (6–25 kg)At least 45 days; synthetic casings, nets and clips allowed.
Cinta Senese finocchionaMade with meat of registered Cinta Senese pigs reared in Tuscany.
Safety
The specification sets pH 5–6, water activity of 0.945 or lower and salt of at most 6 % in the finished salami, and allows nitrite and nitrate as additives.
The word "finocchiona" appears in Rigutini and Fanfani's 1875 Vocabolario della lingua parlata and in the 1889 Crusca dictionary, which ties it to Tuscany. The PGI was registered in April 2015.
